Pumpkin Cranberry bread

Ingredients:

Serves 8

  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 1 tsp pumpkin pie spices (1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp allspice, 1/8 tsp nutmeg)
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup dried cranberries
  • 1 cup pumpkin puree
  • 2 eggs, beaten
  • 1/2 cup maple syrup
  • 1/4  cup oil
  • 1/4 cup orange juice

Preparation:

  1. Whisk all dried ingredients together; then stir in cranberries
  2. Whisk pumpkin puree, eggs, maple syrup, oil and juice.
  3. Stir flour mixture inot pumpkin mixture until just combined.
  4. Spoon into a 9” x 5” loaf pan.
  5. Bake at 350F for 1 hour.
  6. Cool in pan 15 minutes, then remove from pan and cool before slicing.
